SIMPLE VEGETABLE RAITA

Simple Vegetable Raita is simple dish deliciously made with curd and vegetables, spiced with green chilies and seasoned with a tempering of mustard and cumin seeds along with fresh curry leaves. It is a dish excellent to be served with pulav, biriyani or even simple rice and roti.

Add it to the Eid Celebration Menu along with Chicken Pulav and variety of Chicken Curry you like & Enjoy it...


Ingredients:-
1. Plain thick curd - 2 cups
2. Tomato (finely chopped) – ½ cup
3. Onion (finely chopped) – ½ cup
4. Cucumber (finely chopped) – ½ cup
5. Coriander leaves (finely chopped) – 1 tsp.
6. Green chili (finely chopped) – 1 no.
7. Curry leaves – 1 sprig
8. Mustard seeds – ½ tsp.
9. Cumin seeds – ½ tsp.
10. Oil – 1 tbsp.
11. Salt – to taste

Method:-

1. Take the chopped tomato, cucumber, onion and green chili along with some salt in a bowl and mix it well.

2. Add the curd and mix it well. Adjust the salt and keep it aside.

3. Then heat oil in a frying pan, sputter mustard and cumin seeds, and add curry leaves. Saute it for few seconds. Pour this seasoning to the mixture and stir well.

4. Garnish it with chopped coriander leaves and serve it chilled.

Note:- Even you can add other vegetables too, like carrot, beet root, radish etc., of your choice
