Pacha
Moru, which is a drink made out of buttermilk, is one of my favourite
drink in summer, which is absolutely a thirst quencher. In Kerala, a tradition
of giving mildly spiced buttermilk or Sambharam to their guests existed,
which is now replaced by the tea, coffee, juice and soft drinks by
modernization. But still it is been used with meals as pacha moru (spiced salted
buttermilk) or kachiya moru (buttermilk tempered with chillies and curry
leaves). I enjoyed this refreshing drink during hot summer afternoons leaving
me completely dehydrated in Jodhpur in Rajasthan, which is well-known for crouching
heat and. Buttermilk is known for its hydrating and refreshing properties. I
enjoy it with meals too, especially when it includes sambar or aviyal

1. Curd- 1
cup
2. Water- 1
cup
3. Shallots-
2 or 3 nos., sliced
4. Ginger- 1
tbsp., chopped
5. Green chilies-
2 or 3 nos., cut split lengthwise (N.B: use green chilies as per your spice level)
6. Curry
leaves- 1 sprig
7. Salt- to
taste
Method:-
1. Blend the
curd with the water in a blender (2-3 pulses will be enough).
2. Now take ginger
and green chilies, and crush using a mortar and pestle.
3. Add and
mix crushed ginger and green chilies with the blended curd.
4. Then add curry
leaves along with enough of salt and mix it well.
Done!!!
- Can add water according to needed consistency. Will add more of water if it is for serving as drink.
- Serve chilled, if serving as a drink.
